- 20g vegetarian beef slices
- 50g vegetarian ham
- 5 vegetarian shrimps
- 50g enoki mushrooms
- 50g chicken thigh mushrooms
- Rice paper, deep-fried dough, breadcrumbs
- Red onions, roasted peanuts, seaweed leaves, lettuce, crab claws, celery greens, buffalo horn peppers, carrots, roasted sesame
- Seasoning: Vegetarian seasoning, cooking oil, vinegar, vegetarian oyster sauce, pepper, soy sauce, vegetarian fish sauce, sugar
- Utensils: Spoon, pan, chopsticks, skewers, fork
Instructions:
1. Process Materials
First, you soak the vegetarian beef slices in water for about 10-15 minutes, then wash the water several times until the foam is gone, then squeeze dry.
Then, you bring the chicken leg mushrooms cut lengthwise, thinly sliced vegetarian ham, sliced purple onion (30g), sliced vegetarian beef slices, sliced lettuce (200g), crab claws (150g) cut into chunks, chopped celery, chili (1 fruit) seed removed, carrot (1 tuber) peeled and sliced.
2. Make Vegetarian Squid and Vegetarian Shrimp
To make vegetarian squid, first of all, you cut seaweed (2 leaves) into pieces 8cm long, 2cm wide. Then, take 2 pieces of vegetarian hem, sandwiched between a few enoki mushrooms (clamp at the base), then wrap tightly with seaweed leaves. As for vegetarian shrimp, use skewers to skewer each one.
3. Vegetarian Squid and Vegetarian Shrimp
You mix 50g of crispy flour, 1 teaspoon of vegetarian seasoning, 1 teaspoon of roasted sesame and 50ml of water together. When you’re done, dip each shrimp in turn in the flour mixture, then breadcrumbs (50g). As for the vegetarian squid, you just need to dip it in the deep-fried flour mixture.
Then, you heat the oil pan, then add the vegetarian shrimp and the floured vegetarian squid in turn, fry until golden, then take out and drain.
4. Stir-fried Vegetarian Beef Slices, Chicken Thighs and Carrots
Heat oil in a pan on the stove, then add sliced purple onions and saute until fragrant. Then, you add vegetarian beef slices with 1 teaspoon of vegetarian seasoning, 1 teaspoon of sugar, 1 teaspoon of soy sauce and 1 teaspoon of vegetarian oyster sauce. You stir-fry until the beef slices are cooked, then add 1 tablespoon of chopped celery, stir well, then remove to a plate.
Next, you add a little more cooking oil to the pan, heat it up, and then add sliced purple onions and fry until fragrant. When you’re done, add chopped chicken thighs, carrots, and 1 teaspoon of vegetarian seasoning, 1 teaspoon of sugar and 1 teaspoon of vegetarian fish sauce.
Stir until mushrooms and carrots are cooked, no more water, then add 1 teaspoon of ground pepper, 1 teaspoon of chopped celery, stir well and then turn off the heat.

5. Mix Salad
First, you dissolve 2/3 tablespoon of sugar and 20ml of vinegar together.
Then, you put in the bowl of crab claws, sliced lettuce, sliced chili, sautéed vegetarian beef slices and mixed with vinegar and sugar, mix well to absorb the flavor.
When you’re done, put the salad on a plate and add 1 tablespoon of roasted peanuts on top.
6. Making Spring Rolls
You wet the rice paper, then in turn add the sliced lettuce and the mixture of carrots, mushrooms and chicken thighs that have just been stir-fried on top. Then, roll it up tightly and cut it into bite-sized pieces.
