Ingredients:
- 4 soft shell crabs, cleaned
- 1 cup all-purpose flour
- 1 teaspoon salt
- 1 teaspoon black pepper

For the seasoning mixture:
- 2 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon lemon juice
- 1 tablespoon chopped parsley

Instructions:
- Prepare the crabs: Rinse the soft shell crabs under cold water and pat them dry with paper towels. Remove the gills and trim any excess shell.
- Season the flour: In a shallow dish, mix together the all-purpose flour, salt, black pepper, and paprika.
- Dredge the crabs: Dredge each crab in the seasoned flour mixture, shaking off any excess flour.
- Heat the oil: In a large skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).
- Fry the crabs: Carefully place the crabs in the hot oil, shell side down. Fry for 2-3 minutes on each side until they are golden brown and crispy.
- Make the seasoning mixture: While the crabs are frying, melt the butter in a small saucepan over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant. Stir in the lemon juice and chopped parsley. Season with salt and pepper to taste.
- Serve: Remove the fried crabs from the oil and drain them on paper towels. Drizzle the garlic butter mixture over the crabs before serving.
- Garnish: Garnish with additional chopped parsley and lemon wedges if desired.
